Gaither discusses research showing homeschoolers have better nutrition than schooled young people. The health benefits of homeschooling are not to be underestimated. I have met many who homeschool due to some specific health issue often a mental health issue or learning disability. The ability to have the time to eat better meals and to move about more freely is to be highly prized. Schools could put in serious gardens (many have the space) and start eating better right away. Stimulus money spent on a master gardener teachers and supplies would be a good investment.
